1 oz Doorly’s 12 (Barbados)
2.5 oz pineapple juice
.75 oz Campari
.5 oz lime juice
.25 oz allspice dram
.25 oz cinnamon syrup
.25 oz vanilla syrup
1/8 tsp Li Hing powder

This is the “Island Bird”
This is a jungle bird riff. I got my hands on some Li Hing powder after coming across it in a few Martin Cate recipes. For those of you that don’t know it is essentially a dried plum powder with licorice and salt. It’s big in Hawaii. When I started thinking about flavors with dried plum I immediately wanted to incorporate some warm spices. Although not common for a jungle bird I was convinced it would work and I wasn’t disappointed! Although this spec is .25 oz heavier on the sweet than my normal go to jungle bird (SC specs), the salt from the Li Hing allowed for the extra .25 oz without being too sweet (for me at least).
