Ingredients
2 oz Dark Jamaican rum [Hamilton Jamaican Pot Still Black]
1 oz Gold Puerto Rican rum [Angostura 5]
.5 oz Bajan rum [Doorly’s 12]
.5 oz Falernum [John D. Taylor’s Velvet]
2 oz Pineapple juice
1 oz Fresh lime juice
2 oz Ginger beer, see instructions
1 dash Angostura bitters
6 drop Absinthe or Pernod

Add everything except the ginger beer to tin. Flash blend or shake with crushed ice. Add ginger beer into tin and gently stir. Pour into a tall glass or tiki mug. Garnish with a pineapple chunk and mint sprigs.
