Ingredients
600 grams organic ground beef with 20% fat.
Brioche buns (store-bought or home made)
Slow-cooked caramelized onions
Salt & Pepper
Butter lettuce
Black garlic sauce
1 cup mayonnaise
2 fat black garlic cloves
A large bunch of chives

Chop up half of the chives and combine with the ground beef. Cover and set aside in the fridge.

Make a quick version of caramelized onions or even better, a slow-cooked version (you can do this the day before)

Roughly chop up the black garlic, add to a foodprocessor with the mayo and the rest of the chives, and blend until smooth.

Add a teaspoon of salt to the beef mixture and mix well without kneading too much.

Shape the beef patties by hand or a burger press. Each patty should be about 150 grams/5 ounces

Slice open the brioche buns, butter them, and toast them in a cast-iron skillet, on a grill, on in the oven.

Sprinkle the patties with salt & pepper on both sides.

Cook the patties for 2 minutes on each side for medium-rare. Let them rest under some tin foil for about 5-10 minutes so the juices have time to distribute inside.

Assemble the burgers by starting with the sauce on the bottom bun, some lettuce, the beef patty, the caramelized onions, and the top bun also smeared with sauce.
